Quick and Easy Pasties
 

 

These are a great way to get children to eat different veges and can be made and frozen for the nights you can’t be bothered to cook. We call them samosas in our house but they are really just pasties. My 2 year old loves them. We generally serve with some plain yoghurt for her to dip them in. Vary veges to suit your family's tastes.

 

Ingredients:
Puff Pastry Sheets (approx 4 sheets)

200g Low fat beef mince

1 onion, diced small

2 x Potatoes, diced small

1 x Carrot, diced small

Broccoli, cut finely

Peas

Any other veges e.g. capsicum, corn

Curry powder (none - 1 tablespoon depending on your child)

 

Method:
Brown mince and onion, stir regularly to break up mince. Boil potato until just cooked, drain. Add all veges and curry powder to fry pan and stir.  Cut sheets of pastry into 4 squares. Fold into a triangle and join along one side. Fill and seal, last side. You can brush with egg wash (beaten egg with a little milk), but I don’t usually bother.  I suggest cutting 1 sheet of pastry at a time so you don’t use more than you need.

 

Cook:
Place in the oven at 180oC for about 40 min.
 
Store:
Freeze uncooked, separate with grease proof paper.
