Paleo Inspired Choc Chip Biscuit

paleo choc chip biscuitsWhether you’re Gluten intolerant or just avoiding gluten or wheat these little paleo choc chip cookies are great. They are very tasty and more-ish, it really isn’t a massive problem if you have a couple more after dinner or for a snack while doing homework with the kiddies. I like to pack them into snappy bags and freeze them for school lunches. It’s always good to be organised!

Ingredients for paleo choc chip cookies:

  • 1 cup of coconut flour
  • 2 eggs
  • 3 tablespoons of agave syrup
  • 1/4 cup coconut oil
  • Dark choc chips (you decide the amount)
  • 1/4 cup of warm water
  • Pinch of baking powder

Method:

Step 1. Preheat oven to 180C

Step 2. Place the flour oil and eggs in one bowl and mix through.  Add the syrup, choc chips and water. Mix with your hands.

Step 3. The mixture will look a little crumbly. Grab a handful and squeeze together to make a ball. Press down a little to flatten slightly.  Place on a lined tray and bake for 15-20 min
